Process

Wash Process | After picking, cherries are de-pulped to separate beans from their skin. Beans still have sticky mucilage around them. Both beans and mucilage ferment in water for 1-2 days, releasing sugars for flavor. Post-fermentation, beans are washed to remove the remaining mucilage before drying.
